INGREDIENTS:
- 3 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1 teaspoon sugar
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground pepper
- 2 cucumbers, peeled
- 2 cups chopped and seeded tomatoes
- ¼ cup chopped red onion
- 2 green onions, chopped
- 2 avocados, seeded and chopped
- ¼ cup crumbled feta cheese
DIRECTIONS:
1. To make dressing, whisk together lemon juice, olive oil. Sugar, salt, and pepper in a small bowl. Set aside.
2. Combine cucumbers, tomatoes, onions, and avocado in a large bowl. Toss with dressing and feta cheese.
3. Chill until serving
