Sendik’s Recipes

Ingredients

  • 2 pounds red boiling potatoes, scrubbed
  • 3 hard-cooked eggs 
  • 1 celery rib (stalk)
  • 2 green onions 
  • ¾ cup mayonnaise 
  • 1 tablespoons prepared yellow mustard 
  • ¼ teaspoon salt 
  • ½ teaspoon black pepper
  • Dash onion powder
  • Dash garlic powder 
  • Paprika for garnish (optional)

Directions

  1. Place potatoes in a pot with enough water to cover them.
  2. Bring to a boil, then cover and simmer, stirring occasionally to ensure even cooking, until a knife or a metal skewer inserted into a potato can be removed with no resistance, 25 to 30 minutes.
  3. Drain, rinse under cold water, and drain again. Cool slightly.
  4. Cut potatoes into 3/4-inch wedges. Place in a bowl.
  5. Slice eggs to desired size and celery in 1/4-inch dice. 
  6. Thinly slice green onions. 
  7. Add eggs, celery, and green onions to potatoes. 
  8. In a liquid measure or small bowl, combine mayonnaise, mustard, salt, pepper, and onion and garlic powders. 
  9. Mix well, then pour over potato mixture and gently stir until coated. 
  10. Add more salt and pepper to taste. Sprinkle with paprika, if desired. 
  11. Cover and chill before serving.
