Ingredients
- 6-8 C Mixed Fall Greens
Suggestions: Radicchio, Organic Arugula, Organic Red Leaf Lettuce, Organic Romaine Lettuce and, Organic Italian Dinosaur Kale.
- 6 Dried Apricots sliced in strips for garnish
Mustard Vinaigrette:
- 1 C Extra Virgin Olive Oil
- ΒΌ C White Wine Vinegar
- 4T Dijon Mustard
- 2T Stone Ground Mustard
- 1t Fresh Tarragon
- 1 Fresh Shallot
- I Clove Fresh Garlic
- 1-2t Sugar
Directions
- In a Cuisinart, combine vinegar, mustard, sugar, and chopped tarragon, shallot, and garlic. Mix until combined.
- Slowly add olive oil to mixture. Blend until smooth.
- Toss with autumn greens.
- Garnish top with strips of apricot.
