Sendik’s Recipes

Ingredients:

  • 2 pounds firm-ripe pears, (about 6 medium) peeled, cored, and cut into bite-size chunks
  • 1 tablespoon fresh lemon juice
  • ½ cup pure maple syrup
  • 2 teaspoons freshly grated ginger
  • Pinch salt

For the topping:

  • ½ cup rolled oats, old-fashioned or quick cooking
  • ½ cup all purpose flour
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cinnamon
  • 1/8 teaspoon freshly grated nutmeg
  • ¼ teaspoon kosher salt
  • 6 tablespoons unsalted butter, melted and cooled to room temperature

Directions:

  1. Preheat oven to 350 °F. Butter a 2-quart baking dish.
  2. In large bowl, combine pears and lemon juice and toss well. Add maple syrup, grated ginger, and salt, and toss again to combine.
  3. In another large bowl, whisk together oats, sugar, flour, ginger, cinnamon, nutmeg, and salt. Slowly drizzle in butter and stir with a fork until mixture is crumbly and all the ingredients are incorporated. Keep mixture crumbly, breaking up any large crumbs with the fork or your fingers.
  4. Spoon fruit into baking dish. Evenly sprinkle crumbs on top of fruit. Bake until fruit is bubbling and topping is browned, about 55 minutes. Serve hot and warm.

Serves 6 to 8
